Frequently Asked Questions
Wedding
planning is a big task and we're here to help you deal with
ordering the wedding cake as easy as possible. Below are
some frequent questions we've received from our past brides. If you
still have any question, don't hesitate to contact us at

Q: How much are your
wedding cakes ?
A: Generally, our butter cream iced cakes average between $4 to $4.50 per slice while fondant covered cakes are about $6 to $6.50. We charge by
cake and not by slice, so there can be a 10 to 20% swing on price depending on what you're looking to do. If you have a general idea of how
many guests you're serving, you can get an estimated cost from
our
price list.
Q: Is there a difference between the cake we try at the tasting and my actual wedding cake ?
A:
They will taste the same. To maintain the same filling to cake ratio
as the sheet cakes we serve during tasting, we make your wedding
cake with 4 layers of cake and 3 layers of filling.
This is actually
one of the most important questions that you should ask every bakery you
are considering. There are many bakeries that make their wedding cakes
with 3 layers of cake and 2 layers of filling. Generally,
this gives you a lower filling to cake ratio compared to sheet cakes
that you try at tasting. A lower filling to cake ratio will not be as moist.
Q: Who will we meet at our consultation?
A: All consultations are handled by Paul, our head decorator. Paul will be able to help you create the perfect design you're looking for. Just as importantly, he can steer you from any potential problems based on his years of experience. Paul is a second generation baker and has been decorating specialty and wedding cakes since 1987 (when he was 15 years old).
Q:
What's the difference between butter cream and fondant?
A: Butter cream is the traditional creamy icing on cakes while fondant is a sugar dough and has a chewy
texture. In terms of decoration, butter cream has a softer look while fondant will give you a more modern and ornamental look.
Our skilled decorators are able to ice a very smooth butter cream cake, so presentation wise, you're actually not losing much compared to a fondant covered cake. You can see examples in our portfolio Fondant is a sugar dough that firms up with exposure to air. The firmness allows you to do more things on the walls of the cake like
adding seashells, stencil designs, debossed patterns, etc. The one distinguishing feature that is specific to fondant cake is the rounded top corner of each tier. Butter cream iced cakes will always have a sharp top edge on each tier.
Most of the time the choice between fondant and butter cream
comes down to what design you have in mind. Because of our
design skills and technical capabilities, we have done many
cakes with butter cream icing that other bakeries claim must be done on fondant.
Q:
Can you set up fresh flowers?
A: Yes!
We're happy to help set up fresh flowers at no additional
charge.
Q:
Does your wedding cake taste the same as your regular
celebration cakes?
A: Yes! We
really do believe in quality of taste, especially your wedding
cake. We keep cake vs. filling ratio same as our regular
sheet cakes so you always get a moist and flavorful cake.
Setting up a wedding cake is different than a regular cake in that the fillings are specially mixed so they remain light but is easy to cut.
Q:
I read I should order a
"presentation" tier cake and sheet cakes to supplement.
Can I do that? And how much are sheet cakes?
A:
Of course! It all depends
on how big you want your "presentation" cake to be. See our
price list to see cost of slices. The sheet cakes are made the same way as your presentation cake so your
guests will not see the difference between the two.
Q:
I also read that I can order a
big dummy cake and have just the bottom tier real for my
cutting. Should and can I do that?
A:
We don't offer
dummy cake options and really don't recommend it. There is always a different look between fake and real cakes. Also, there's not significant cost savings because all the time needed to make a cake is the same...we still need to bake, fill, ice and decorate all the cakes.
Q:
I have a destination wedding
in the Monterey Bay area but I live quite far away. Can
you still help me ?
A: Yes! We love
helping out of town friends who have picked our beautiful area
to mark their special day. We're very flexible in how to best work with you. The easiest thing is to
start by sending us an email with images of cake designs you
already have in mind and any changes on that image you want done
to your cake. Let us know how many people you're
expecting. Once we get the design, we can work with you over email and phone to
provide you with general pricing and availabilities. If you don't have an idea of what you'd like, we can start with a phone conversation to discuss ideas.
For flavors, it's a good idea for you to make a visit is to taste
our cake so you can select your favorites Some brides have
sent their parents or friends to make that choice for them or we
can schedule a time with you the next time you're in town. If you don't have time to do a sit down tasting, we can prepare tasting plates for you to pick up and try while you are in town.
Q:
When do I need to secure my date by
to guarantee a cake with you?
A: We do limit the number of wedding cakes per day to allow for
proper attention and delivery. This number varies depending on the size and complexity of the cakes. Some dates do get booked up fast, so generally, you should try to book with us as soon as you feel comfortable with us as your cake vendor. Most brides book with us 4 to 6 months prior to their
wedding date. Brides usually do this at time of their
consultation or shortly after.
If for any reason you can't
come in
for a tasting and consultation until close to your wedding date, you can make a $100
non-refundable deposit to book your wedding date. We can give you a fairly accurate quote based on a phone conversation or seeing some images of cakes that you are interested in.
Q:
When do I need to pay by?
A:
At the time of your order, we require a
50% deposit and the balance is dues six weeks prior to your
wedding date. You can pay by check or by credit card.
Q:
How do I set up a Tasting & Consultation?
A:
You can book your consultation through our online calendar or call us at 866.548.7266 x4.
Q: Do you have a storefront ?
We
have an actual retail store that is open 7 days a week. You won't be
meeting us at a local coffee shop or have to make an appointment
every time you have to drop off a swatch, topper, etc.
Q:
Do you offer Tasting & Consultations
for Quinceneras, Sweet 16s and Anniversaries?
A:
Appointments are available if you are interested in doing a tiered cake. You can complete a request for Tasting &
Consultation online or contact us at 866.548.7266 x4 or
sales@FBandC.com.
