Freedom Bakery & Confection is a 2nd generation family owned business.
We have been serving our customers for over 35 years.

The Bakery was started in 1975 by founder, Tony Liu. The bakery was so named because it was located on Freedom Boulevard. Tony came to the United States as a pastry chef from Taiwan and worked at Southern California bakeries with various pastry styles from German to French. He eventually settled in Watsonville and opened his own business. His worldly experience allowed him to offer a variety of pastries and cakes but all with one common recipe - using only the finest ingredients.  When the bakery started, it distinguished ourselves from competition by focusing on cake drawings instead of just the traditional figurine or toy decorations. And became master painters of cakes!

n early 1997, a new generation of decorating machines was introduced to the bakery world. This incredible machine used the latest in computer technology to "imprint" photographic quality images onto cakes. The introduction of this machine was a win-win situation for our customers and us. The new technology allowed us to reproduce superior quality images at a lower cost to our customers. What was once a $40 to $50 decoration was now reduced to $10 to $20. It also allowed our customers the chance to create their own designs by designing their images in their computers at home or business.

We were one of the first bakeries in the country to adopt and take advantage of new computer decoration technologies to create images beyond just cakes.

To further enhance our product offering and better serve our customers, we launched a new product line, Cookie Greetings®, one of the first "Photo Cookies" ever in the market.  We utilized the machine's amazing ability to reproduce images in fine detail on delicious cookies and they were well received by both our retail and corporate customers. They were popular for product launches, trade show handouts, anniversary celebrations, birthday & wedding favors, etc.

We also made our entry into the online world with the launch of our first website, FreedomBakery.com, featuring our cakes and cookies. And the demand of our Cookie Greetings® grew rapidly across the country so to better serve our customers nationally, eBake.com was launched in January 2000. The site was created mainly to feature and sell our Cookie Greetings® nationally.

In 2001, we launched a new product line, Foto Cocoa™ which featured full color imaging on chocolates.

Since then, we have been working and studying the art of chocolate to provide our customers a truly delicious chocolate collection that tastes as great as it looks. New machinery was acquired to improve the production quality and process. We also selected the best Belgian Chocolate for our Foto Cocoa™ line.

In 2006, we introduced our own internally developed food printing technology.

Our proprietory imprinting equipment offers better resolution and color control/consistency than commercially available machinery. It produces a much better print of logos and photo. With our direct imprint capability, we also started working on a cookie with no icing. Cookie Emblems™ was an instant hit with customer looking for a healthier cookie and truly unique look.

By 2007, we added additional chocolate products including our Chocolate Nibbles™. With all the new additions of chocolates, we added Confections to Freedom Bakery and became Freedom Bakery & Confections. We launched FBandC.com which combines all websites to this one. We also now have mint tins available!

In 2009, we've added an entire new collection of cakes, cupcakes, desserts, and additional edible gift and favor items. We extended our current wedding cake flavors and designs to include new premium flavors and never seen elsewhere designs with fondant and graphic imaging. We continue to produce quality tasting cakes and unique designs whether computer or hand decorated.

We entered our 35th year with even more customized gift and favor items including brownies, gourmet cookies, and even dog biscuit treats!

The fun and cleverness of these unique dog biscuits, Celebarktion Pet Treats, were instantly loved by pet lovers. The gourmet dog biscuits are made with human grade ingredients and tested and loved by dog and dog owners.  Like our other products, the dog biscuits are also available with custom or stock designs.

Our Family have ventured new opportunities and opened different store locations throughout the years in the Bay Area. In the late 70’s a Santa Cruz location was opened but sold after a short 7 years when a trusty family member of the business had to relocate to Southern California. A Salinas location was opened soon after but in 2005, the Salinas bakery and original Watsonville bakery went separate ways - WE ARE NOT AFFILIATED WITH SALINAS.  Second generation brothers Paul and Gary successfully opened a San Jose location from 1997 - 2006 and made numerous media headlines. In 2006, Gary decided to leave the family business and earned a Masters in Education and is now devoting his career and time as a teacher back in the Watsonville area. Paul married wife, Anna, in 2004 and started his own family. Paul and Anna decided to grow their family in Santa Cruz County and thus, decided to focused on distributing goods out from the one Watsonville store.

In January 2010, the bakery relocated from the original Freedom Boulevard location to a new location on Hangar Way in Watsonville.

Always helping the family bakery since young, Paul earned a CPA after college and worked at different major corporations in San Jose prior to fully taking over the family business. His passion remains in baking and the family business and now handles and oversees all production and business development projects. Anna met Paul in San Jose when she was the Marketing Manager at numerous different major shopping centers. She now handles the marketing for the bakery and juggles her most important job- motherhood, at the same time. Tony remains to come to the bakery regularly and offer his expertise.  But his focus now is his two grandchildren!

Our Difference remain to be how we maintain our quality.  We continue to use only the finest ingredients and provide only the highest quality of product.  We don't use rice paper in our Photo Cookies and Cakes so you get only the cleanest bite in taste and texture.  All our chocolates from cake shavings to Photo Chocolates are made with 100% Belgian Chocolate.  Our standard of quality includes also our service.  Whether helping you at our store, on email, or over the phone, we strive to make your experience with us a pleasant one. We are also happy to work with our customers on creating unique ideas from wedding cakes to favors for corporate product launches.
